Three simple recipes for banana bread

It is believed that banana bread first appeared in Southeast Asia. However, no one is completely sure, as there is not much documentation or information about the history of this bread.

Wherever it comes from, banana bread is not just tasty. It is also an excellent source of potassium and vitamin B6 and C.

Let’s take a look at some recipes.

Classic banana bread

Banana bread

The first recipe we share today is a version of the classic recipe. The only difference is that we do not use butter in this recipe. This means that it does not contain any saturated fat.

How does the bread get juicy, then, you might be wondering? We use oil instead of butter.

We recommend that you use olive oil because of its nutritional value.

Ingredients

  • 3 eggs
  • 200 grams of white sugar
  • 200 ml of oil
  • 3 bananas
  • 300 ml of milk
  • 400 grams of self-raising flour
  • A pinch of baking soda
  • One drop of vanilla extract
  • Malted cinnamon (to taste)

This is what you do

  • First, for the hot oven to 180 ° C.
  • Prepare the mold with flour and oil or mold grease.
  • Beat eggs and sugar well until it turns a whitish color.
  • Add oil and milk and continue whipping.
  • Peel the bananas and mash them with a fork.
  • Mix the bananas with the rest of the wet ingredients.
  • Strain flour, baking soda and ground cinnamon. Set it aside.
  • Combine vanilla extract with the wet ingredients and whisk well.
  • Carefully mix in the dry ingredients. Avoid whipping too much as this can activate the gluten and make the bread dry.
  • Put the dough into the mold.
  • Bake the bread for about half an hour  or until you can stick a toothpick in it and it comes out dry.

Banana bread with seeds and nuts

Another ingredient that has lots of nutrients is seeds and nuts.

In this recipe we use sunflower seeds and flax seeds. (You can of course add nuts and seeds you like.) To give the recipe even more fiber, we recommend that you use  whole grain flour instead of regular flour.

Ingredients

  • 3 bananas
  • 150 olive or sunflower oil (whichever you prefer)
  • 150 brown sugar
  • 3 large eggs
  • 100 grams of walnuts
  • 100 grams of milk
  • 350 grams of whole wheat flour
  • 1 bag of baking powder (16 grams or 1 tbsp)
  • Flaxseed and sunflower seeds (as many as you want)
  • Oatmeal (to taste)

This is what you do

  • For hot oven to 180 ° C.
  • Mash the bananas with a fork and keep them in a bowl.
  • Add milk and mix well. Set the bowl aside.
  • Whisk the eggs in another bowl. Add oil and sugar and beat until the batter gets a little more volume.
  • Mix the contents of the two bowls.
  • Strain the flour and baking powder and mix it with the rest.
  • Chop and add walnuts.
  • Pour the batter into a greased form sprinkled with a little flour.
  • Sprinkle on the seeds and oat flakes on top.
  • Bake the banana bread for an hour  or until you can stick a toothpick into it and it comes out clean.
